Yes there are things you can do before you go away to make your ski holiday a whole lot better. Of course most people don't bother but it's up to you!!
This for me is the only thing that really matters in advance, skiing does put a strain on your thighs in a way that other sports don't - even if you are quite active normally I would strongly suggest doing exercises for a month in advance, especially if you are going to go on a learn to ski week holiday. It will be a shock to the system believe me!
Personally I think squats or some variation of, that you feel most comfortable with is the best thing to do, even just a few are beter than nothing!! When your holiday arrives I would do stretches in the hotel or chalet every morning before going out too, but that is up to you.

Some people claim that going to a dry ski slope for a ski lesson or two is of some benefit, as I've never done that I don't know but from those that have I've heard that they feel a little more confident about starting their ski classes on the snow after having done that, so maybe it works!
Whatever you prepare in advance or not I certainly wish you the very best of luck when learning to ski, it certainly hooks a lot of people in, maybe you'll be one of them. It sure is great fun once you've got the basics under your belt.
